Dulce de Leche

Dulce de Leche is a caramel like confection from Latin America. Dulce de leche is used to flavor candies or other sweet foods, such as cake, cookies and ice cream. My favorite uses of it are in a Banoffee Pie, filled in Tarts or swirled in a Brownie Batter like in this recipe Dulce de Leche Brownies which is absolutely Aah-MaZing! It also makes a good fruit dip.  Dulce de Leche is not available ready-made in many countries, and that is why had the dire need to teach myself how to make it at home. A homemade form of Dulce de leche sometimes is made by boiling an unopened Can of Sweetened Condensed Milk for two to three hours in a pot of water or 30 to 45 minutes in a pressure cooker. I love using the pressure cooker, it saves so much time in preparing meals or in this case a terrific confection.

However, in this recipe there are some particularly important safety measures you should keep in mind when using the pressure cooker. Following are the Do’s and Don’ts you should keep in mind.

DON’TS

 -Do not use a dented or a damaged Can.

 -Keep in mind that the Can should Not come in direct contact with the walls of the pressure cooker.

 -Last but not the least Do Not open the Condensed Milk Can while it is hot as the contents may still be under pressure.

DO’S-

 -Place the can of condensed milk in a stainless-steel steamer basket.

- Fill the water level above the can in the pressure cooker.

- Keep the Can in a lying down position.

 If you prefer you could transfer the condensed milk in a glass mason jar, secured tightly with a lid and place it in your stainless-steel steamer basket lying down. The stainless-steel steamer basket is used so that the can or the glass jar does not come in direct contact with the extremely hot walls of the pressure cooker.

 

Total Time- 60 minutes

Active Time -5 mins

Yields – 1 Can (14 ounce)

 

INGREDIENTS

  • 1 Can Sweetened Condensed Milk (14 ounce)

INSTRUCTIONS

  1. Prepare the pressure cooker by adding the steamer basket.
  2. Place the can, on its side (not standing) in the steamer basket. Do not put it in direct contact with the hot base or sides of the pressure cooker. Alternatively, you could pour the condensed milk in a glass mason jars with a tight seal.
  3. Fill the pressure cooker with enough water to cover the can. Make sure it is fully submerged while not exceeding the "maximum capacity" of the pressure cooker.
  4. Seal the lid. Pressure cook for 25 mins. Let the cooker naturally release. This might take 15 minutes.
  5. Do not remove the can from the cooker or attempt to open it while it is warm, there is still pressure inside the can. You want to allow the can to cool in the water before handling it.
  6. When the can is completely cool, open the seal and transfer the Dulce de Leche in a container.

If the Dulce de Leche is too stiff, simply warm it with a splash of milk to soften it to the desired consistency.
