Banana Snack Cake, Eggless and Dairy free

I was never fond of bananas as a kid, in fact I was always very wary of any snack that had anything to do with bananas.  I quite frankly loathed the smell of it. But when I had my son, bananas being one of the foods introduced in the first year of his eating solids, I started buying them. Of course, initially he could not eat the whole banana and I became the dustbin for the leftovers (eye roll) I will not lie sometimes I started enjoying it. I think I used to be so tired with mothering duties, that a sweet snack probably gave me the much needed energy to keep going. I think that is when I realized what they mean when they say Bananas are so called mood lifters, once you eat one you do feel very satisfied as they are full of fiber and sugar thus making you feel energized.

Over the years I have started keeping banana in my kitchen, sometimes for a nice cream, sometimes banana bread and sometimes for smoothies. My Banana bread (I will post that recipe soon) and this Eggless Banana Snack cake recipe includes chocolate chips and cinnamon as I think that helps combat the strong banana smell which I still do not love. This recipe is very flexible, it is eggless that means Vegetarian, and can easily be made dairy free so that means Vegan too. So Yay! You can eat cake and help Save the earth! ;)

 

Total Time – 40 mins

Active Time – 15 mins

Yields – 8" pan

 

INGREDIENTS

  • 1 1/2 cups all-purpose flour, sifted
  • 2/3 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup any milk (i used almond milk)
  • 1/4 cup vegetable oil
  • 1 cup mashed banana (roughly 2 medium ripe bananas)
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla extract
  • 1 ½ cups semisweet chocolate chip (make sure its dairy free chocolate chips if you are vegan)

 

INSTRUCTIONS

  1. Preheat oven to 350 F. Lightly grease an 8 x 8 square pan.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, baking soda, cinnamon, and salt.
  3. In another large bowl, whisk together the liquids: milk, oil, banana, vinegar, and vanilla.
  4. Pour over the dry ingredients and mix everything until combined. Do Not over work the batter.
  5. Stir in 3/4 cup chocolate chips.
  6. Spread the batter into the pan and top with the remaining 3/4 cup chocolate chips.
  7. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool before serving.

 

I had some ganache left over at home and I put it in a zip lock and zigzagged it on top of the cake to make it pretty, but this step is totally optional, if you do so remember to use a vegan frosting if you need to.
