This Italian bread is so delicious and easy to make, it is going to keep making its way back on your dinner table every now and then. Focaccia can be used as a side to many meals or as a sandwich bread.

This focaccia is perfectly soft and fluffy and satisfyingly chewy.  It is sprinkled with crunchy and flaky sea salt and drenched in extra virgin olive oil. This recipe is amazingly easy to make by hand, and even easier to make with the help of a stand mixer.  It happens to be a vegan recipe. It can be shaped into a free-form round or pressed into a rectangular baking dish and usually is one inch in thickness. I currently live in Seattle and snow is not common enough out here. It usually is a little dusting or an inch or two of snow once or twice in a year. When Seattle does get snow, the city tends to shut down or operate at low capacity, even more than cities that get far more inches of snow. The reason behind this is that Seattle, is filled with hills so the temperatures remain low and near freezing, so the snow melts but then freezes overnight, making roads slick, icy and dangerous. We get a maximum of 3-5 days of snow in the winter that settles on the ground.
